This is our weekly meal plan for the 7th April 2018. The kids are at home for their second week of Easter break so they will be helping out in the kitchen again.
Our weekly meal plan – 7th April 2018
Monday – BBQ pulled pork made with leftover roast pork. I will probably pop this in the slow cooker and serve with mash, rice or homemade 1p tortilla wraps and lots of veg or salad.
Tuesday – Meatballs/veggie balls with spaghetti. I’m looking forward to trying out a new recipe for veggie balls using kidney beans. Regular meatballs for the rest of the family using beef mince.
Wednesday – Leftover chicken and veggie curry from the freezer. I batch cooked both these curries last week ready for quick easy meals this week.
Thursday – Sausages and mash with broccoli and gravy.
Friday – freezer food/leftovers.
Saturday – Bacon, leek and mushroom pie served with veg and roast potatoes. I batch cooked the pie filling in the slow cooker the other week so it’s ready to go straight from the freezer. I also made a double batch of pastry when I made the last pie so I have a portion of pastry in the freezer too.
Sunday – Quiche and salad. I tend to use up random bits in quiche so I will use any veg that I find in the fridge/freezer that needs eating up,
