weekly meal plan – 14th April 2018
Monday – Curry Night, we have chicken and veggie curry in the freezer ready to heat up and serve with rice and homemade naan.
Tuesday – Homemade Leek and Potato soup with fresh bread. We love soup night with fresh bread from the bread maker.
Wednesday – Veggie Lasagne, I’ve never made a veggie lasagne before so I’m really excited to make this. I’ll be using courgettes, peppers, onions and a white sauce made with soy milk and vegan cheese.
Thursday – Pasta with pesto or cheese and salad. Just something quick, easy and nutritious to knock together on a busy evening.
Friday – Freezer food/ Leftovers, whatever we have that could do with eating up.
Saturday – Homemade Pizza with lots of veggies. My kids love making their own pizzas and it works out so much cheaper and healthier to make our own. I also tend to sneak in a little wholemeal flour into the dough so added extra fibre too.
Sunday – Meatloaf served as a roast dinner with roast potatoes, veg, stuffing, gravy and lots of veg. I really don’t want to do a big shop this week but we are running low on meat. I found some beef mince in the bottom of the freezer and thought a meatloaf might work in place of a joint of meat.
