Cutting back on our groceries was one the first things I did when I decided to switch our finances around. I went from spending £400 per month to just £200 per month and meal planning played a very important part. Since then meal planning has become a part of our weekly life and routine. So when The Organised Life Project and Katykicker started this new meal plan linky I knew I had to join in!
Our weekly meal plan – 12th January 2018
I’ve started with Monday as we always plan for the week ahead. This gives us enough time to go through our cupboards, fridge and freezer to find out what we already have so we can get our shopping list ready. We always try to use up what we already have before we buy more food. This prevents waste and keeps us on track budget wise.
I’m currently doing a no spend January so only buying food that is essential. I have been keeping an eye out for anything on my list being yellow stickered in the supermarket. I love finding a bargain but keep reminding myself that it’s only a bargain if you actually need it!
Monday – Spaghetti and sauce
Tuesday – Veggie stew with vegan dumplings
Wednesday – Veggie lasagne
Thursday – Sweet potato, chickpea and spinach curry with rice
Friday – ‘Freezer food’ (Basically anything I can find in the freezer, fish fingers, leftovers I’ve frozen etc etc.)
Saturday – Homemade pizza
Sunday – Toad in the hole
I make most of my food from scratch as I find it keeps costs down as well as offering more nutrition in our meals. I am also taking part in Veganuary while still cooking for a meat eating family (I like to challenge myself!) so planning everything out like this means I can keep on top of everything without going too crazy.

How do you make your vegan dumplings? I am vegan too and are planning to make a stew one evening but haven’t a clue how to make the dumplings? (and you can`t have stew without the best bit!)
