The kids are back to school this week so our weekly meal plan is going to be quick, easy, filling and nutritious! I have a strict budget of £100 this month which I’ll admit I’ve almost spent so we will be utilising what we have already.
Our weekly meal plan – 17th February 2018
Monday – Stir fry, Most likely using this recipe with lots of veggies and whatever we have in the cupboards.
Tuesday – Curry, I will probably make this with a tin of chickpeas, sweet potato, an onion and frozen spinach with a tin of chopped tomatoes and some garam masala.
Wednesday – Pasta with a homemade tomato sauce. Or maybe pesto (which I know we have in the cupboard) whichever we fancy on the day.
Thursday – I’m still really unsure about this meal. This will probably be thrown together last minute with whatever I can find.
Friday – Freezer food/leftover night, whatever we have that needs eating up.
Saturday – Homemade pizza with veggies and homemade pizza sauce.
Sunday – Pork chops or sausages and mash with tons of veggies. I might do roasted veggies with this depending on what we have in the fridge.
