For this weeks meal plan I’ve picked easy to make recipes for the kids to help with while they are on easter holidays. We will be using the slow cooker a few times so we can batch cook meals to pop in the freezer for a later date.
Our weekly meal plan
Monday – As it’s easter we will be visiting family over the weekend and we will be eating over theirs. I’m really looking forward to being cooked for.
Tuesday – Curry night, Chicken curry for the rest of the family made with chicken thighs and lots of veg in the slow cooker. Veggie curry for myself. We will make enough to put some portions in the freezer for upcoming weeks.
Wednesday – Slow cooker beef stew, with tons of veg to bulk it out. I’ll make myself a vegan stew and dumplings or I might even have leftover veggie curry.
Thursday – Pasta, I’m not sure what I’ll do with the pasta yet maybe meatballs/veggie balls and a tomato sauce? I really want to try out a new recipe for veggie balls so this may be my time to try it.
Friday – Freezer food Friday, our day to eat up any leftovers/ food we can find in the freezer. This just prevents the build up of food we always accumulate in the freezer that might not otherwise be eaten. It’s a great time to be inventive with the meals we eat.
Saturday – Roast pork with all the trimmings, stuffing, apple sauce, tons of veg, roast potatoes and gravy.
Sunday – Leftover roast dinner. For the last few weeks we’ve had leftover roast dinner on the Sunday. It’s been working well for us although I don’t know if it will continue through the summer.
